It never fails that we have chicken stir fry at least once a week. My husband hates that we have it so much, but I can guarantee that the kids will clear their plates when I make it!
I usually use a pound of chicken, cut into one inch cubes, and sauté in olive oil.
Sometimes if I am feeling lazy I will just grab a bag of veggies out of the frozen food section and call it a day. Otherwise we try and use different ones every time. Broccoli is always a must Beni says. You can also use peppers, mushrooms, pineapple, asparagus, onion, green beans, and any other veggie/fruit your feeling up to trying.
We never use the same teriyaki mix. I figure because we are having the same meal we should mix it up a little and give it a little different taste. But usually it comes from a bottle. I’m not crafty enough to try and make my own!
Cook your veggies and mix with the chicken. Pour your sauce over and I let mine site for 15-20 mins just so the veggies and chicken absorb all the flavor!
We used to put it over white rice but have since started using quinoa mixed with brown rice! Mmm delicious!
